Where did you previously live?
Many places but prior to here Melbourne, Victoria.
What made you/your family move here?
We came here on holiday during an extensive East Coast trip then returned to Melbourne and after approximately three months returned here – now we holiday elsewhere.
What do you like to do with your time here?
We are passionate restaurateurs of Thornton’s Restaurant and Bar located beachfront at Thornton Beach on the Daintree Coast. We also create spice blends with our business Daintree Spice Co.
Daintree Spice Co is renowned for six blends including Dukkah, Chilli Coconut Rub, Jungle Curry Powder, Lemon Myrtle Salt and Pepper, Smoky BBQ Rub and the Reef and Rainforest Rub. We use 100% natural ingredients sourced from sustainable plantations and organic produce in our restaurant whenever available.
We both love living in the Rainforest it is such a special place.
We enjoy an abundance of magnificent trees and plants the forest has to offer & also the amazing animal species endemic to this area the beautiful beaches also make it a fantastic place to live.
That’s why we have been part of this wonderful and diverse community for over 20 years.
In fact we both worked at the cafe back in 2003 for a previous tenant. It was very different then it was not enclosed at all and open to the elements and with a beach kiosk feel it was called Cafe on Sea then.
Andrew started his career in Melbourne as an apprentice pastry chef and I started my apprenticeship in one of London’s luxury five-star hotels. We have both travelled the world individually, cooking and residing in many different places.
Since we met more than 30 years ago we have jointly owned and operated cafes and restaurants within Melbourne.
In the Daintree we have worked in many of the local businesses including The beach house Heritage Lodge, Lync Haven, the Cow Bay
Hotel, the original Dragonfly and Cockatoo Hill Retreat (The Bistro) and of course here at Thornton’s!
We enjoy taking our dogs for walks on the beach, tropical gardening and generally enjoying the paradise where we live. Unfortunately since opening Thornton’s all of our time is consumed by the business which we also enjoy immensely, plus the dogs still getting their walks.
What changes have you seen whilst living here?
Members of the community come and go, some dirt roads are now sealed.
